Bikavér has been the mainstay of Szekszárd for several centuries. It is our generation’s great challenge to revitalize and modernize the concept. Momentum and fruit is provided by Kékfrankos, Bordeaux varieties add flesh and substance, while Kadarka and Sagrantino bring spice and excitement. Vinification: Separate fermentation for each variety and vineyard site in concrete, plastik and steel tanks. Inoculated, delicate extraction with daily 2x pigeage or pump-over. Most lots pressed after 14-20 days of skin contact. Malolactic fermentation was inoculated. Barrel aging for 14 months, mostly in used 1000-liter foudres.
